On lazy Sunday afternoons I love nothing more than baking, I love how my house fills with the warm scent of freshly baked cookies. After watching some Gordon Ramsey I felt inspired to make vanilla shortbread dipped in chocolate.
For the Shortbread
1 Tsp Vanilla Paste
125g Butter (Room temperature)
Start by lightly beating the eggs and vanilla in a small bowl
In a larger bowl cream the butter and sugar until pale and fluffy, then slowly add the eggs. I used a hand mixer but feel free to use a kitchen aid if thats easier.
Next incorporate the flour until it you have a dough.
Preheat the oven to 180 Celsius.
Roll the dough out in a circle and then place on a baking tray. Score the dough lightly into 8 sections then chill for about 30 minutes.
Pop the dough in the oven for about 30 to 40 minutes, it should be a pale golden colour when done.
Slice your shortbread into wedges while its still warm.
The next part is totally optional, dip the wedges into some melted chocolate ( I use Whittakers) and leave to cool on a rack. (unless you’re like me then tuck in while they are still warm)
